Bacon, sweet corn, and tomato risotto

Risotto is my new favorite food. I have been on a risotto kick for a few weeks now. I really like brown rice risotto, but today I used arborio to make it quicker. 


I had some fresh corn and tomatoes to use up. So, I threw them in. I made this amazing chicken and mushroom dish in the pressure cooker too. More on that later. :) Both recipes are from my newest ATK cookbook, which you should go buy. It is the Best $10 I have spent in a long time.
