I think these are absolutely adorable and wonderful.  I already love Mason jars and put all sorts of things in them.  This is just adding to the obsession. 
 
 
P.S.  This site, www.thekitchn.com is quickly becoming one of my favorite food blogs to read.  I am looking forward to what they post for Christmas.  There are tons of fun ideas and recipes on their site.  It is my daily inspiration. 
 
 

cough drops

When I was younger I did not like cough drops nor saw the point of them.  Over the last year or so I have really come to depend on them.  My throat seems to often be dry and itchy.  I blame the recirculated air at work and a recent discovery of allergies to almost everything (mainly perfumes, and fake flowery scents in lotions and candles and the like).
 
This weekend was nice and relaxing.  I found a bunch of bone-in chicken breasts on sale at Food Lion and spend Saturday afternoon boiling them (with various root veggies) to make broth.  Saturday evening I picked the chicken off.  I love boiling chicken for a long time because the chicken meat usually just falls off the bones. It is super easy.  I also like boiling the bone-in chicken because it makes for better broth and it is cheaper than boneless.  From the chicken I froze two Tupperware containers and made chicken & rice soup and a German dish from my German cookbook (it has a sauce made from flour, chicken broth, egg yolks, and cream - oh yum).  I am looking forward to heating that up tonight over some Brown rice for dinner before dashing off to teach my chemistry labs.  Which reminds me, I will be very sad when they end.  I hope they ask me back next fall.  :)   The soup was especially delicious today for lunch because I woke up with a soreish throat.  
 
Friday night we went to a costume party at the Townsends.  Jared dressed up as Wolverine.  I forgot to take pictures.  Saturday was the Reformation Children's party.  I helped set up around 1:30 - 4:30.  I came home and changed in to some warm clothes before heading back to church with Jared for a bonfire.  I felt so tired.  This sleep schedule with Jared working some nights but not other nights is getting to me. I am extremely thankful that he doesn't always work nights and that his job is mostly day work (this is the first time he has ever worked nights in 6 years at his job).  Hooray.  Sunday I cooked up some German food (I love my German cookbook): Schnitzel and croquettes.  They turned out pretty well. Not nearly as good as real German food.  Thanks to Sarah for taking me over to Germany. I'll never forget it.  German food is one of the bests.  I'll probably bring the leftovers to work tomorrow with my favorite condiment, Ketchup (ever since starting to listen to A Prairie Home Companion, I hear the Ketchup song in my head when I type that word - ha ha). 
 
I have so many sewing projects to complete (or start) and Jared working nights has put them all on hold.  They are sitting in piles in my spare bedroom waiting for me.  I am going to buy some new charms at Mrs. Shelton's shop on Thursday, hopefully.  I am going to try to use that a a jump start back in the sewing.

A little housekeeping:  I thought I could use a little updated look, but I haven't made the formatting all right.  My header is way too big, but I don't have it saved on my computer right now. 

I went and had my teeth cleaned today!!  Yay.  They feel so ... clean. 

My two labs that I am teaching are going really well.  I love being a university lab instructor.  If I could only break into the professor world.  I will continue to try to climb in any doors that they open to me.  :)

Tonight I am going home to make stuffed shells for dinner.  They are going to be delicious!  And I really wish the weather would make up its mind to stay cold because I REALLY REALLY want to make soup.  I love soups, stews, and chowders.  I rebelled and made some chicken and rice soup last week because Jared had a cold.  Thankfully, I didn't catch his cold.  I am so grateful for that.  I am craving some good potato and ham or simple potato chowder.   Soup also calls for a batch of rolls.  I love Autumn.  Speaking of weather, it is way too hot!

Last night Jared and I spend the evening watching the end of Martin Chuzzlewitt.  What a great movie.  I didn't enjoy it the first time I watched it.  I thought it was rather weird and the main character, Jared's favorite character, Pecksniff ANNOYS me.  But the movie has grown on me.  I enjoyed it greatly this time around.  The book is going to be on my reading list soon.  Maybe after Jared and I finish reading Harry Truman we can jump into this book.  Here are the books on my reading list right now (but first I have to buy them... NOTE: Christmas presents - Mom and Mrs. Shelton you should talk to each other before buying any of these - ha).  I have been eyeing these beautiful books for a while.  I have read a lot of review about them and can't wait to read them.  Which reminds me, I am so glad that we don't have internet.  I don't have time for it.

8888

Yesterday I turned 8888 days old.  I celebrated by going to La Tolteca for lunch (for two of my co-workers birthday).  We haven't been out for anyone's birthday since my birthday (in June).  We don't go out much... After lunch I went to pick out apples with my Dad.  Tonight Jared and I are making applesauce with the parents!  I love making applesauce (oh, and eating it warm).  Love love love. 
 
I made gingerbread (or as Jared calls it, "gingerbread cake") and real whipped cream Wednesday night.  It is so much fun to whip cream into whipped cream.  Plus, it tastes fantastic.  I love autumn!  One of these days I might post pictures of all the delicious food that I am making.   Saturday I am making rolls for the women's luncheon at church.  Sunday I am making chocolate mini cupcakes with cream cheese frosting.  Next weekend I will be making an apple crisp.  I might have to make a batch of gingerbread cookies soon.  I need to find a source for cheap bulk molassas.  Does anyone know if Sams carries it?
 
My new snack to nibble on before lunch is apples and peanut butter.  And I am still on my sesame stick kick.  I bought another bag at T.S. Smith yesterday when we went to pick up apples.  Dad bought me some apple doughnuts too.  <3  Thanks, Dad!!  I also made chex mix last week and this week and Jared made some Shelton mix.
 
Last night Jared went to school to study and write his research paper outline.  I turned Les Miserable up really high and sang loudly to it while mending the holes in the knees of his pants.  Patching jeans is a lot harder than I thought because you have to patch them by hand.  Pushing a needle through two of three layers of jeans is rather difficult.  But they are finished now and he has another pair of pants back in the work rotation.  I still have one more pair to finish (and start).  ha ha.  Isn't it incredible how we can listen to almost any song that we want to, at any time.   I think that is really amazing and I am very thankful for it.  Music makes me happy.  I am thinking about borrowing some books on tape from the library and listening to them while I sew (and Jared isn't around to read to me).  We are 2/3rds of the way through this Harry Truman book.  It is fascinating!!!  I have really enjoyed it.  I stopped reading my Oppenheimer biography for a while to read my Bonhoeffer biography (anyone see a pattern here... time wise... all of our books recently have been placed in the early to mid part of the 20th century or written in the early to mid part of the century). 
 
My car is still in the shop (we had to return it to get some things fixed that were supposedly fixed the first time).   It is kind of annoying to have to leave the house, drop Jared off, come back to the house, wait around my phone for a call from Jared, go pick Jared up, and drive back home.  I mean, it isn't really that far, but it is just the fact that I have to stop in the middle of things and I become all distracted.  Also, it isn't as if Jared has a fun car to drive.  If he had a little zippy car that was easy to climb into and fun to drive, I wouldn't mind driving all over the place.  But his car is HUGE.  The doors are super heavy and they never shut right.  It sits so low to the ground that I have repeatedly told him that when I we are expected a baby, I refuse to climb in and out.  I have enough trouble as it is now (mostly because my side of the car is parked next to the curb and it I am almost sitting at curb level when we pull up).  Anyhow, I am thankful that we have a running car, even though it is tough of my legs (I'll think of it as gym squat time). 
 
It has been so nice to have Michelle, Jamie, Dasha, and Anna come over the past two weekends.  It is really fun to have people in your house.  The older I become the more I just enjoy sitting around and talking.  Sitting down and talking to someone face to face beats the phone, the Internet, or all the other ways of communication that we have. 
 
Well, hope all is going well in blogger land.  Once I get to a computer with unrestricted Internet access (and have a decent chunk of time) I am going to start narrowing down my facebook friends.  That will probably be in another 6 months.  ha.  Maybe I will post pictures too.  :) Just maybe...

This weekend Jared and I finally found a cedar chest that was in our price range.  Here was our Saturday:

* 6:15 - wake up, eat a snack, and get ready for the gym.
* 7:00 - wait for gym to open, find out that it is not, and head home.
* 7:30 - get dressed and head to the park and flea and farmers market
* 8:30 - head up to bargain bills, amish market, and other laurel stores
* 9:15 - stop in various antique stores
* 9:45 - head to goose on the roof and find the chest!!!  YAY! 

This thing was painted the most gross brown.  We could tell that there was a tealish layer below that and finally an orange layer at the bottom.  But I was up to the challenge (and since it was 1/2 to 1/3 the price of normal cedar chests that are beat up in antique stores, I thought it was a great deal). 

* 10:30 - we took the thing home
* 11:00 - I went grocery shopping to pick up food for my mother for Sarah's goodbye dinner.
* 12:00 - we went to pick up my brother's truck to tote every box that Jared has received from everything in his house, since he moved in.  There were a lot of boxes in the shed!
* 1:00 - we went to Lowes and picked up paint stripper, sandpaper, and fencing.
* 2:00  - we headed home and unloaded everything and started loaded the boxes up into the truck. 
* 3:00 - I started stripping paint off the chest. 
* 6:30 - I let Jared take over after he got back from dropping the boxes off at the dump and my brother's truck back to the house. 
* 7:30 - we went inside to read a little Harry Truman.
* 8:30 - I fell asleep.

On Monday, we sanded that box for three hours until almost ever flake of orange paint was taken off.  Wasn't it a beautiful morning?!?  This whole weekend was lovely.  We then took showers, at lunch, and just hung around the house doing nothing.  It was lovely!!  I did a little cooking, a little sewing, a little planning of a baby quilt for a good friend of mine, and a little sitting next to Jared and hold his hand without having to worry about going anywhere.

Now I am off  to a chemisty department meeting.  Love to all my family!  It was great to see you this weekend.  I love vacations!  We will go camping soon and it will be marvelous!!!!  I love Jared. :D

Two blog entries in two days...

Just in case you didn't realize… Chipotle opens today!!! 

And if that wasn't great enough, I also, probably, will be able to pick up my car today, complete with its new doors!  Why is my car having two new doors installed?  On Sunday, August 1, our alarm didn't go off.  Jared had to be at church 15 minutes from the time I woke up and looked at the clock to practice a song and for praise team practice.  So he jumped out of bed and quickly left for church.  I assured him I could just drive myself (this was only the second time since we have been married that we had planned to drive separately, I say planed because I never ended up driving).   Jared left, I took my shower, boiled water, pealed peaches, sliced up peaches for a pie, packed a change of clothes to decorate for VBS, and various other things. 

Around 9:10 I walked outside, leaned over and picked up the paper (we receive the paper on Sundays for Fwwwweeeeee because Jared is a student), opened the back door behind the passenger door, threw in the paper, and then noticed glass all over the back seat and the window shattered, with a four or five inch hole in it.   I walked around and saw the driver's door handle was dented in about an inch (not a lot) and there were several dents in the door behind the driver's.  I called Jared.  I called Mom.  I called Dad.  I called Jared again.  I sat on the front steps and cried.  Everyone I knew and loved was at church or on their way there; no one would be checking their phones for two or three hours.  I was all alone.  I sent Jared a text; I figured he might miss me once church started and check his phone.  I called Anna.  I called Luke. I called Sarah.  Sarah picked up around 9:25!!! 

To shorten this story, Jared came home, I gave him a huge hug, we called the police, they came by and said my car was vandalized (but nothing on the inside was touched, so I don't really know why they would break the window or hit it), and we made it to Sunday school.  Yay.  It took until Wednesday to have the insurance come out and look at it.  Wednesday?  I mean, that is four whole days.  That is silly.  The insurance tried to tell us that we would have to pick up our rental in Lexington Park, Md.  For those of you that don't know where that is, google it, it is directly across the bay and south of us.   By car it takes 3 hours and 10 minutes to reach there.  The insurance said it was  the closest place.  Thankfully, after spending two hours arguing with them and them promising to even come pick us up (they weren't understanding the whole three hour trip thing), they let us rent a car at the airport.  YES!  

So I have been driving this little go-cart of a car for the last 2 weeks.  It is great on gas and I love parking it!  It is so nice to fit easily in parking spaces.  I will miss that.  However, I miss my car.  I miss not having to worry about it picking up dents and dings in the work parking lot.  I miss the comfortable seats.   I miss normal.   I miss being able to find my car.  Ha.  This car is too small and I forget what it looks like.  Thankfully it has New York plates and I have been able to locate it that way.   

So hooray, for Chipotle!  And hooray for my car!  And hooray for being married and spending the evening with your husband doing nothing.  Last night was the first night in forever that we were free to go to the gym and then come home and do nothing.  NOTHING!!  I love it.  We read a little Harry Truman, cleaned the kitchen, folded clothes, and sat around and talked.  I don't think we have sat on our church in at least 4 weeks.  It was lovely.  Oh, and hooray for a husband who cleans (I mean completely cleans and wipes down) the entire kitchen and vacuums the house will you go grocery shopping on Saturday and have been too sick and tired to clean.  Hooray Hooray Hooray!

(A quick praise during my afternoon break - ignore any spelling errors or missing words, just focus on how great God is)

 

Over the past few months I have had a real problem at work concentrating because the woman I work next to is constantly calling her family (and friends) and talking (loudly) on the telephone (in her language).   While she does this she plays minesweeper (or some game which requires constant clicking of the mouse).  It drives me crazy and headphones don't seem to block it out.  Grrr. 

 

Anyhow, today I started off the day by praying about this specifically instead of letting it bother me.  God cares about the small things too, right?  All morning she left her desk and visited her friends around the plant (jnstead of talking on the phone).  When she was at her desk she just surfed the internet and played computer game, but didn't talk on the phone.  This was so unlike her and I knew it wouldn't last.  I said a quick thanks to God for the temporary relief a few times during the morning and let Him know how much I loved the peace and quiet.  After lunch, I just KNEW she was going to talk on the phone because she ALWAYS does for the last two hours or so of her day.  She made two phone calls and each time I prayed they wouldn't be long.  Ha.  She was off in less than five minutes, probably closer to 2 minutes.  She has called several people this afternoon and they haven't been home!!!  YES!!  That practically never happens.  This is so great.

 

Hooray.  Hooray.  Hooray for a God who cares about the little things in life.  It has been nice to have a day without the constant drone of her voice on the phone.  What a great day!  Praise God.  I am still amazed that she is not on the phone.  She'll be leaving work in half an hour!  I have made it almost a whole day without hearing a few hour long phone conversation.   I love it!

Reasons I love summer!

Grilling – it keeps the house cool and it tastes amazing.  Plus, I can grill all sorts of favorites that I thought could only be done in the oven, like pizza and feta chicken.  I am working up my nerve to try some desserty things on the grill.  I really think it would work.

Porches- my dream is to have a house one day that has a nice big porch on the front and I can watch people and the sun or just the wind in the trees.  Sigh.

watching sunsets (or sunrises) – I need to take time to watch more.  They are each a work of art.  God is marvelous.

 

it being dark later and light earlier – it makes climbing out of bed easier (so does being married and knowing if I get out of bed I will be rewarded with a hug)


fireflies – has anyone noticed more of them this year?  YAY!!  I was just thinking I hadn't seen them in a while and then I notice them this summer.  Maybe I just wasn't looking the past few summers.


fresh fruit and veggies – I love not eating starches with dinner and lunch.  I feel so much better.

 

tubing – it is kind of scary, but it scares the laughing right out of you.  Mainly, I like spending time with family and friends!


sudden thunderstorms (or any thunderstorms) – I like them.  They are fun to watch.

 

The  smell of rain coming soon – so refreshing


fresh peaches – enough said

 

gold paint still on my hands – from painting for VBS last night.  I love VBS and reformation party.  Those are two of my favorite times of year.  I love creating!!  I love working with young people and seeing them serve others.  It is very refreshing.  I'm glad the youth group is helping to decorate.  That is great.

picnics – if the weather would cool down, I might go on a few.  I eat my lunch outside under a tree out front of Harvard if it drops belong 80 degrees.


traveling, especially when it involves seeing something new or visiting friends/family.  Oh Germany, I want to visit you again someday.  And oh how I wish I could have gone camping with my family this last week, but at least work has been busy and has gone pretty quickly. 

 

Driving with the windows down – okay so I have to do this because my ac in my car broke.  Ha. 

 

Air conditioning – in the house, in my car, at work, and other places I go.   It hasn't been working at work or in my car.  It makes me thankful for the other places. 

 

Fresh food and skirts would probably be my top two things.   I figured I would mention again how awesome fresh food is.  My mouth has been so happy recently.  YAY, for summer! 

 

 

In other news, Jared and I finally made it through Lord of the Rings.  What a great book (or books)!  It has been so much fun having Jared read to me while I cook, bake, and sew.  Marriage is so much fun.  I love being married.  We are going to visit the Grandis this weekend and going to see a play.  That should be a blast.  I miss living with them.  Work is as amusing as always.  I am very thankful for my job.  Happy July 22, everyone.  Happy 3 years and 1 day anniversary to Linnea.  How exciting!!!

I have decided that I am my favorite cook* and my house is my favorite place to eat.  :)  If I could cook for a restaurant and create meals for people, I think it would be the best job ever. 

Thanks to Mom for the lovely birthday meal.  Jared and I don't get fajitas very often.  Mary's Delight is always amazing too!!  YAY!!

Thank you to Hope for the fun red cutting board (and for noticing that I needed a larger cutting board), the knives, and the mini bowls.  Sarah, I love the polka dotted plates.  Mom, I love the books.  And thanks to Anna for the GROTTO's PIZZA SAUCE!!!  Oh my goodness, I cannot wait to make pizza again.  Maybe I will make you some deep dish pizza with it. 

I wish I had my camera with me;  I have lots of sewing projects that I could post pictures of.  I recently made the cutest baby quilt! I will one day post pictures of it.  I finished the quilt that I was working on back in September.  ha.  I was hand quilting it.  But it is done now. 

* My Mom, Aunt Suzanne, and Mama Cindy are also near the top of the list.  Some days when I am really tired when I come home from work I would rather be at their homes eating dinner.  Most days though, I love to cook.

Random Things

My wedding photos found there way into Coastal Style Magazine. Not the ones that I wanted or when I wanted them to be published, but they are in print and that is pretty cool.  :)   Pick up a copy in stores around Salisbury.   It is funny to me that my simple wedding is in the pages of "Luxury living on the Eastern Shore".
 
I love this weather!!  Sunday and today are absolutely beautiful. 
 
Jared and I went to a funeral on Saturday for his boss's mother.  Jared sang it.  We walked around downtown Laurel while we waited to have lunch afterwards.  It is pretty down by the river.  We went in a baby store, one of the only two stores around (the other being a liquor store) and I saw one of the neatest things.  I want to see if my Dad and I could work this up whenever I have children.  They had a dresser that was flipped upside-down and the bottom (which was now the top) was a changing table.  The drawers were all reversible so they could be flipped either way.  As an engineer, I thought it was a great idea.  I mean, who uses their changing tables after the kids are gone.  This one can just be flipped over and used as a dresser for the rest of its life.  The other neat things that they had there were cribs that came apart and turned into a headboard and foot board when the kids grow up.   That also seems like a great idea.  Again, what do you do with a crib once a kid is gone?  Why not spend a little extra money and get something you can use for years.   NOTE:  I am not pregnant I am just talking about things I saw this weekend that I think are neat. 
 
We had lunch at an amazing restaurant called the Georgia House.  Oh my goodness, it was such good food!!!  We had the best mashed sweet potatoes that I have ever had, green beans, asparagus, garlic mashed potatoes, grilled chicken, shrimp on rice, roast beef, carrots, mac and cheese, noodles and red sauce, strawberry pretzel salad, smith island cake, cream puffs, brownies, apple cobbler, and peach bread pudding.  We didn't eat dinner that day or breakfast the next day.  I ate a very small lunch the next day and no dinner.  I was so stuffed.   If you are ever up in Laurel, I highly suggest going to this restaurant.  (www.eatgh.com)  I see from their website that they have five locations.  One is in Georgetown... I wonder if any of my family has been.
 
Today I am eating fruit salad for lunch (and cheese and crackers).  I cut up tons of strawberries yesterday (from my parents), kiwi, mango, cantaloupe, banana, and grapes.   I cut up a HUGE bowl.  I intend to keep fresh fruit in the house from now until September or October.  I love that I can go outside (to a field) and pick fresh food.  I love it!  It is so much fun.  
 
I am trying to check the spelling, but my gmail is all messed up.  I guess I will just send this to my blog now.  I want to go enjoy the outdoors.  Did I mention I love this weather?!?

cooking & baking makes me happy (so does sewing & taking care of a husband) - being a wife suits me well :)

I bought a new (old) cookbook last night at an antique shop in Salisbury. It is over 1600 pages and was published in the 1940s. It is one of the best cookbooks I have ever read. I read cookbooks like novels. They are like old dear friends to me. I read them and I reread them. This book only has a few pictures, but it is classic. I bought in and a Singer dress making book from the 1950s (complete with adorable hand drawn figures - I love that era of illustrations) for only $5.00. I thought it was a pretty sweet buy. It is in great condition, unlike some of my cookbooks so far.

The whole book is good home cooked food. I become hungry just reading through most of the recipes. I want to cook huge home cooked meals for my family when I have children. Cooking for one is no fun. Cooking for two is nothing new (and a lot of eating leftovers). I will treasure this book for a long time. It makes me happy. A lot of modern cookbooks are filled with pretty pictures and fancy meals that I would never prepare. What is wrong with chicken pot pie, lasagna, tacos, roast chicken, beef stew, and many other classic foods?!? Nothing!


P.S. Betty Crocker is still my favorite basic everything cookbook. It has everything to start off a good cooking career. This new book goes into details about healthy eating, canning, sauces, how to cut meats, how to set tables, how to garnish plates, and so much more. The dessert section is almost half the book. It makes me happy. I love it. I had just made it to the potato section when Jared wanted to run over to SU to post his, “What a friend we have in Jesus” video from the coffeehouse last night. I felt like I was putting down a good book. I wanted to finish!

A few updates on life...

Thanks to Sarah Meadows Foley, for the great worship music cds she gave me for my 21st birthday.  They are a staple of the music that I listen to at work (along with all of Indelible Grace's hymn (check them out if you haven't ever heard them because they are AMAZING!!  I own all seven cds they have put out.  Thanks to my mother for having the last one shipped to my house as a great surprise).  This is one of the songs that have been stuck in my head all week.

Last night, while Jared was at the men's retreat, I made granola and yogurt.  They both turned out wonderfully!  I have tried several different granola recipes and they have all turned out terribly. They are all very floury and gross.  I've gagged down a lot of them, but in the end I have just had to throw them away.  Sigh.  I was so happy to find this recipe.  It seemed to simple when I first read it, but I really like the flavor.  These are going to be a staple in my house from now on.  I mixed the yogurt with peaches today and brought it to work for my breakfast.  I sprinkled the granola over the top.  It was so good!!  I also tried a little bit of the granola with milk last night; it was also good.   I am thinking of adding a few more things to my granola and also, I want to try to make it a little for clumpy (if that is even a word).  Right now it is just very loose granola.  But this way I won't ever break a tooth trying to eat it.  :)

 

In case you want to try to make either, I have included the recipes below.  The recipes are from one of my favorite websites, The Frugal Girl.  If you haven't ever visited her delightful little site, please do.  She is incredible.  And for all my Salisbury readers, she lives just on the other side of the bay and is in a PCA church…. How cool is that!?!

 

I have added some of my own comments in throughout the recipe.  I fourthed both the granola and yogurt recipe.  I will probably half both of them next time.

 

Granola

2/3 cup honey
1/2 cup vegetable oil
1/3 cup packed brown sugar
2 teaspoons vanilla extract
4 cups old-fashioned oats
1 cup sliced almonds
1 cup flaked coconut
1/2 cup sesame seeds
1/2 cup salted sunflower kernels
2 cups raisins

 

(I left out the sesame seeds and sunflower kernels, (like the frugal girl, but I would really like to add the sunflower seeds, I think they will be a really nice addition).  I also didn't have almonds, but I they are on my grocery list now so I can make another batch of this yummy granola. 

 

Directions:

1)In a small saucepan, combine honey, oil and brown sugar; cook and stir over medium heat until the sugar dissolves. Remove from the heat; add vanilla.

 

2)In a large bowl, combine the next five ingredients.(note: This does not include the raisins.)

 

 3)Add honey mixture, stirring until evenly coated. Spread onto two ungreased (I sprayed PAM on mine) baking pans. Bake at 300° for 20 minutes, stirring frequently (let's just say, I stirred it four times the entire 40 minutes I had it baking…). Stir in raisins. Bake for 10 minutes.

 

4)Cool, stirring occasionally. 

Store in an airtight container. Yield: 10 cups.

 

 

Homemade Yogurt (makes 4 quarts, which will keep for at least a month in the fridge)

For vanilla yogurt directions, see the bottom of the recipe.  I made the vanilla recipe.  I didn't add a lot of sugar because I figured the fruit would be sweet, but I ended up having to add more sugar to my yogurt when I ate it today.  But my plan is to wean myself off super sweet yogurts.

Ingredients

1 gallon of milk
1 cup yogurt starter(you can use a small cup of plain Dannon or Yoplait yogurt, or you can use a cup from your previous batch.)  I used Dannon because it was on sale at Super Fresh this week (starting yesterday).  I bought containers for 29 cents!  Woohoo.

 

1. Place four quart glass canning jars, four lids, and four screw-tops in a large pot. Fill with an inch of water; cover with lid and heat to boiling. Boil for ten minutes. Leave the lid on the pot and move it off the heat until you are ready to use the jars. I sort of do this… I usually dunk them in hot water and let them sit there for a while.  I stuck in a saucepan last night and let the water boil around it.

 

2. Pour one gallon of milk into a large, heavy bottomed stockpot or Dutch oven. Heat the milk to 185-195 degrees Farenheit(90-90 Celcius).  I wisk the milk as it heats up. 

 

3. Place the pot in a sink filled with cold water and let the milk cool to 120-130 degrees farenheit(50-55 degrees celsius).  This part is really awkward for me to hold the pan down in the water and wisk (but probably only because 1 quart of milk isn't heavy enough to sink to the bottom of the sink).  This happens really fast. 

 

4. Stir one cup of yogurt starter into the cooled milk, using a whisk. Stir well to ensure that the starter is thoroughly incorporated into the milk.

 

5. Pour the milk into jars, and put the lids and bands on. Place them into a cooler.  I put the jars in the sink (after I have drained it) and pour into the there because otherwise I make a mess.

 

6. Heat one gallon of water to 120-130 degrees F(50-55 degrees C) and pour into cooler.

 

7. Shut cooler lid and leave in a warm place for three hours. When the three hours are up, place the yogurt in the refrigerator.  I left mine overnight (about 8-9 hours) and it was finished in the morning.   I put it in the refrigerator before I left for work and it was quite thick.  I drained some water off the top before I packed some in my lunch/breakfast. 

 

To make a delicious vanilla version of this yogurt, add 1/2 to 1 cup of sugar to the four quarts of milk when it's cooling in the sink. Then stir in 1-2 tablespoons of vanilla, depending on your preference, and proceed as usual with the recipe. Remember,  I 1/4thed this recipe: I put in about 1/8 of a cup and ½ a tsp of vanilla.   I think I would put in more vanilla next time.

 

Other than that I have simply been doing a lot of cooking and reading.  There isn't anything too exciting to report.  I might be teaching two chemistry labs at SU next semester.  If I do, I will have more access to internet and I might post pictures.  :)  

 

Easter was a lot of fun because my parents had a bunch of people over including, the Taylors, Seips, Mae, and Jared and me.  I love being a member of a large family and an even larger church family.  It makes me so happy.  I made lemon meringue pie and key lime pie.  I think they are two of the easiest pies to make.  Anna and Andrew taught me how to play tennis afterwards.  I never knew tennis was such a fun game.  I would really like to learn how to play it now. 

 

God is good. He has been very faithful to Jared and me.  We feel very blessed.

They moved my desk today to what is called "the fishbowl".  There are four desks against each wall and one at the end (in the shape of a horseshoe).  I typed in a little diagram below.  Maybe it will turn out.  My desk is highlighted in purple. I am in the middle of the room.  The woman next to me wears really strong perfume.  It is really setting off my allergies.  My head feels like it is going to explode.  This is not good.  sigh.

Quail Cove

Do you know anyone that buys stuff from Quail Cove?  I am thinking about buying whole wheat and grind it myself.  But it still is very expensive... As in $3.75 for a 5 pound bag.  It is cheaper in the store.  It really isn't worth it.  I want cheap whole grain flour!  Any suggestions?

I miss not having NBC.   I think that every year the Olympics take place.  Maybe if I watched them I would not enjoy them as much.  

I am reading several good books at work right now, Goforth of China and Stepping Heavenward are at my desk right now.  They are both really interesting and challenging.  Jonathan Goforth was crazy; I wish I were 1/10 as dependable and persevering as him and his wife.  He gave away over half his missionary salary!

I am teaching ESL for the next few weeks for the beggining class.  Please pray for me (and my students).  Numbers have really been declining recently and I would like at least a few students to teach.  I am actaully pretty excited about getting up in front of people again to teach.  I like teaching.  I haven't taught anything since my Chemistry class ended.   We are going to be talking about money and food.  It should be pretty fun.  Prayer is always appreciated. 

You can also pray as I teach a training class at work for our 20+ engineers and help with 3 other classes for manufacturing.  I am not so keen on teaching them especially as a new employee and on a topic that I am not so sure about.  But God is faithful and He will see me through.   I figure chocolate chip cookies can't hurt my cause either.  ha ha.  So I am bringing those along next Thursday to my meeting.  :)

On the way out to the gym yesterday, I checked the mail. In the mailbox was a box from Amazon.  I hadn't ordered anything, but I thought maybe Jared had ordered something for school.  I handed it to him and he got all excited and told me to close my eyes.  Then he opened the box and handed me the book inside.  It was a German Cookbook!  :) 

Yay!  I have been saying for the past month or so that I really wanted one for my birthday so that I could try a few recipes from Germany.  I never expected him to order it for me.  I was so surprised and happy.  Jared gives some of the best gifts.  It is so much fun to be married to him.  Thank God for Jared and the gift of marriage.  I love sharing my life with him.

For the first time ever, in the history of the company I work for, they closed because of snow! Those crazy New Yorker work through all sorts of snow (except when the city declares state of emergency and doesn't allow people out on the roads). Good thing because our road still hasn't been plowed and is a six inch slab of ice and potholes. Jared head out to shovel out my car and after working on it for half an hour he came back inside the house to take me to work. Thankfully I thought, maybe I should call and see if there is a delay or something (even though they told me that they never close). When I called they said, "first shift is canceled today".

So, on Thursday I had a snow day and so did Jared. He read me Lord of the Rings while I worked on my new quilt and while I cooked (soup and cinnamon swirl bread) and while I hand sewed one of my old quilts. We worked on a puzzle together, played a few board games, and watch a Jeeves and Wooster. It was so great and relaxing. Thank God for a husband who loves me and a day to enjoy being together in the same house.

I do like my job; the days go by very quickly.  It is extremely amusing.  However, it was nice for a day off.  

Oh, and grocery shopping is so much better with Jared!! But Walmart on the other hand is terrible. It is such a mess and nothing was in stock. sigh. It was annoying. Boxes were all over the floor and things were thrown everywhere. They didn't even have green peppers. I wish we had a Super Target. I would totally pay the few extra cents to shop in an environment that was friendly and clean and cheerful.

Mom, where do you buy that awesome stir fry sauce? Is it only sold at Food Lion? And what is it called? I went to Walmart and Super Fresh last night and neither of them had them. :(

1.  I had a great time at my parents house this weekend during the snow.  Friday night we went to the Shelton's to celebrate Pastor Shelton's birthday.  Then we came home and spent the night at our house.  When we woke up we didn't have power so we headed to my parents house because they have a woodstove!!   YAY!  Jared didn't have to work so we all played in the snow all afternoon building an igloo (that never got a roof - ha).  Jared and Luke dug a snow cave that Luke tried to sleep in Saturday night.  Sunday we just hung around the house and took a few walks in the snow.  It was great.   If you ever need a good Bed and Breakfast you can stay at my parents (we have done it the last two weekends and it has been so much fun).  Thanks Mom and Dad.
 
2. I love pita and cream cheese.  I also love english muffins, butter, and honey. 
 
3.  Kickboxing is now offered at nights at the Y!  Yes.  I think I am going to have to go.  I miss kickboxing. 
 
4.  I have decided, yet again, (while at work today) that Delirious is one of the greatest (if not the greatest) Christian band to ever exist.  I am so very thankful for them and for my Dad who shares my love of them.  :)  And for my husband who likes them better than most of my music and will listen to them with me. 
 
5.  I am also thankful for a husband who helps me put away the dishwasher, wash the bathrooms, grocery shop, and vacuum.  I am also glad that he will read to me while I fold clothes and clean out piles of papers from last semester.  I love that he goes to the gym with me and likes my cooking.  Life is more fun with Jared. :D  He makes me laugh and smile so often.   We have so much fun doing the most boring and everyday tasks.  Marriage is great.  Jared and marriage are better than I ever thought possible.

My job is really funny. It makes me laugh. I enjoy coming in to work each day (not the whole waking up at 5:50 thing, but I have worked out pushing my snooze until 5:55 and still making it to work in plenty of time - ha). The days go by really really fast, which is a good thing because otherwise I don't think I would enjoy my job half as much.

My car has new struts and rotors and brake pads. My Dad is bringing it to me either tonight or tomorrow. I am so excited to drive it again. It is going to be smooth.

I love Jared and being married to him is so much fun!! He makes me laugh all the time and he eats my food.

And in other news, it is snowing outside. I have already taken three walks in the snow. One at morning break and two during lunch time. ha. People must think I am crazy, but I love it so much. :)

As disruptive as the storm will be in the Midwest and Plains, plan on "no travel" in the Virginias, central and southern Pennsylvania, the Delmarva and much of New Jersey Friday night into Saturday.
Apparently, we have become "the delmarva".  This is funny to be because the va in delmarva stands for Virginia, so why mention it again?
